Potato Latkas
Ingredients:
- 3T onion
- 3C grated potatoes
- 4 eggs
- 2C flour
- 1t salt
Mix all ingredients while heating 1/4" inch of oil in a skillet. Test that the oil is hot by flicking a little water into it. It will sizzle if hot.
Use your hands or a couple of spoons to form the batter into paddies. Cook on both sides, being careful while turning not to splatter yourself with hot oil.
Eat with apple sauce.
