This is my mother's recipe that I learned over twenty years ago. I had
forgotten it, so I asked her, and she looked it up in her little box
full of recipe index cards. Thank you, Mom!
- Make a graham cracker crust in a 9" pie pan (or buy one at the
supermarket): crush 22 graham cracker squares in a zip-lock bag, add 3
tablespoons of sugar and 6 tablespoons of melted butter, mix with your
hand.
- Beat two eggs real well. Set aside.
- Beat one stick of oleo (my mother's name for margarine, but you
can use butter if you prefer) till very creamy.
- Add one cup of powdered sugar. Beat until fluffy.
- Melt two squares of baker's chocolate. Add and mix until light (it
changes from a dark brown to a lighter brown).
- Add eggs. Beat well.
- Add a few drops of peppermint.
- Pour into crust. Refrigerate until set.
- Yum!
